| Calling all guru chefs...I'm in need of HELP! I'm writing a paper on aspics and chaud froid for school and I'm having trouble finding any information on their origin. Any other information on this topic would be very helpful. Thanks! |

| The larousse states that it is probably derived from the greek word aspis, which means buckler or shield. |

| Don't know where it originated but I know that aspic was used to preserve food, prevent it from drying out keeping in the foods moisture and freshness. Chaud-froid, means hot-cold. It's made hot but served cold. Used for buffet displays or as coating meats puoltry and game. Hope this helps. |
