Post What is an airline breast?

Hello, I am a student at culinary school and I was trying to figure out what the heck an airline breast is.

Also known as a SUPREME. It's the breast with the wing bone attached and cleaned. Since the wing bone is on hence the name airline. This breast is usually used in classical dishes or to show off skills that it takes not to burn the bone. Hope this helps.
