 Missing The Applause For The Team!
Service ends and the real Chefs take off to have a cold one and miss the applause, I say it goes to the team that stays till 2:00am and cleans up after me, I have a great sous and I walk into a super clean kitchen every gig! Thanks team!

With sincere thanks we send this card. The day was beautiful and your service and preparations at Le Gala were superb. Everything went beautifully and your patience assisted us more than you could imagine. We were the talk of the town, and, of course, I took the credit! however, you deserved it because you knew what you were talking about.
We did applaud the chef and staff, however, I don't know if they heard it. If you could pass on our sincere thanks for their services.

Keep it, preserve it, frame it. It's rare that the BOH gets mentioned in these nice thank you cards.
