I don't know of a book that deals with "breakfast cookery done buffet style", but a great book to gain inspiration from is "A Real American Breakfast" by Jamison & Jamison. It is loaded with great breakfast ideas!!

Also for inspiration on themes, a very small and inexpensive book - with some recipes that might be adapted to buffet serving:
Breakfast in Bed; Morning Menus and Sensational Beginnings
