I used to made a dough for samosas that might work for you. I just hope you can scale it down to what you need:
4.8 k all-purpose flour
8 Tablespoons kosher salt
3 pounds Crisco
2 liters water
Mix the flour and salt well. Cut in the Crisco and work until small particles. Work in the water and knead until all the water is absorbed, about 15 minutes. Chill, well wrapped in plastic wrap, until needed. Then, roll out to required thickness, fill, seal, and fry. |
