Smile finding a good butcher....

hello!

i am going to start making my own various stocks. obviously stock recipes call for bones and lots of them. i've read bourdain's contribution to stocks in his new cookbook and am now inspired.

how do i go about finding a really good butcher and make super nice with them so i can get bones and stuff???

Ask around. Try contacting a local stock yard. There are internet resources that will ship you bones, but the shipping is prohibitive. Have your friends save bones.

At least here, we who are desirous of bones are in competition with pet owners (at least for beef bones) who want, and will pay for, bones for their dogs!
