| Im planning on roasting pearlonions and garlic along with my turkey in the same pan. Is this a bad idea since the onions are so much smaller then the turkey ? Will the onions burn b4 the turkey is cooked ? |

| It's a great idea -- the onions and garlic will pick up the turkey flavor, and the drippings will pick up the onion and garlic flavors. But yes, they can burn if you cook them as long as you cook the turkey. The solution is simple: don't put them in the roasting pan at the very beginning. Wait until the last 30 to 45 minutes of roasting and add the (peeled) onions and garlic then. |

| The drippings will help the onions brown. Onions have a lot of sugar (I know this is hard to believe!), which is why browned ones are so tasty- they can caramelize. The smaller they are, the faster they'll cook, so try to pick onions of uniform size. I would say 35-40 minutes' cooking time is plenty. Check them after 1/2 hour, just to be on the safe side.
