Chef stupid question

my mind wont think straight tonight.. ok... on a citrus fruit, the colored part is the zest and the bitter white is the rind???

Hey oh

Ok, so what part is generally concidered innedible? The zest or the pith? I've heard the pith is toxic, but I've also read that candied peel is the whole rind?

The colored part is the Zeste and is where all the essential oils and flavor is located. The white part, or the "pith" is bitter in flavor and that's why it is generally not used. As far as being toxic, I don't believe that is the case. Candied peels are made from the rind minus the pith.
