I now use plain button mushrooms from the grocery for an omlette filling. I saute them in garlic butter and a little Sauterne. I'd like to find a mushroom that is flavorful on its own.

chanterelles, morels, shiitake, black trumpets, porcini...to name a few.
Shiitake are the most accessable and flavorful
