Default What's Growing In My Vinegar????

Dear friends:

I have this bottle of Champagne vinegar that I think is about a year old. The other day I noticed this fuzzy dust-bunny looking thing floating near the bottom of the bottle. Has the vinegar gone bad? I thought vinegar had a long shelf life because of the acidity? Can I pour it through a fine strainer and still use it? It smells OK. I have another bottle of vinegar, unopened, but not new, and it has a baby floater in it. Anybody know what these critters are?

Yup: not a baby, but a mother. Mother of vinegar. In fact, I think that if you add that to a bottle of wine, it will help turn the wine into vinegar, but in a controlled way (not as can happen if you leave it exposed to air for too long).
