| This was another interesting piece I made up that I thought would be great for a cafe' or sandwich shop. Ingredients: -Chicken, grilled over charcoal preferably -Mayonaise -Sour Cream -Cilantro -White Onion -Poblano Pepper First, sear the outer skin of the poblano and strip it off to get that smoky pepper flavor. Finely dice the finished poblano, cilantro, and onion. Take the charcoal-grilled chicken and shred. Add mayo and sour cream (2 units sour cream for every one unit mayo), and add diced veggies. Mix, add salt and pepper to taste, place on your favoirte bread (I would recommend rye). As a personal touch, I put a dash of tabasco and a sprig of cilantro on top and served as an open-face sandwich on toasted bread.
