| Why is it that when I look at pizza dough recpies they always add one table spoon of salt. Whats the salt do? ![]() |

| Slow the yeast, whiten the crust (according to Joy of Cooking's comments about salt and bread), but mostly it is to keep the crust flavorful in contrast to the intensely flavored topping. Phil |
