Default xanthan

i would like to know how many teaspoons of xanthan to how many mls of water to make a syrup if anyone can help would be great

Hey Kiwi. The info is out there. Not easy to find, but it's there. I found a couple of things, mind you these are not "hard and fast" rules, just some examples.

From 'Everyday Low-Carb Cooking'.
1/2 cup unsweetened cocoa powder
1 3/4 cup water
2 cups sugar equivalent zero-carb sweetener
1/8 tsp salt
1/2 tsp vanilla extract
1/4 tsp xanthan or guar gum

Whisk the cocoa and xanthan gum into the water in a 2-quart saucepan.
Place it over medium heat and whisk constantly until it comes to a boil.
Reduce the heat to low and let it set on the stove for several minutes,
stirring occasionally. Remove from the heat and add the sugar substitute,
salt and vanilla. Let it cool to room temperature, stirring occasionally,
and pour it into a pint container. This can be stored in the refrigerator
for several weeks.
Makes about 2 cups.
