| Should I put salt and pepper in baked plantains? Which cheese to use, white or yellow? Should I add the cheese only at the end? What oven temperature? Can I grease them with olive oil? HELP! |

| You can put oil on them and anything else you like on potatoes. Are you using green or yellow plantains? You can put lime juice and chili on either. If you are putting cheese, use a moterrey jack or other Mexican type near the end of cooking. Best thing is to look for recipes for them and follow the instructions.

| OH GOD! PLEASE tell me you aren't going to dirty a plantian with Cheese or Salt and pepper! UGH! Sorry, but I'm a purest when it comes to plantains, ever since I was taught the real way in Central America. "Fry" them in olive oil, The darker they are on the outside, the more ripe they are on the inside, when they are a bit crisp, take them out and dry them on a paper towel. When you've done the whole lot, put some butter and brown sugar in a pan, and put the plantains back in. If ya aint making them that way, ya aint making them right. (in my mind)
