Default I need some spice ideas

Hey all. When I went down to Florida for my fathers funeral there was an unopened box with his last order from Penzeys. I had already planned on making some spice mixtures with things from my garden this year to give as holiday gifts. In the box was India Fennel seeds, Oriental mustard powder, Arrowroot, European Mixed Peppercorns and Chinese Cassia Cinnamon.

I have fresh dried Cayenne and Thyme from the garden. I was going to add some Fennel, Mustard powder and Pepper and make a Blackening Spice.
But are there any other thoughts on uses for the Cinnamon, and Mustard, Arrowroot, Fennel, etc. that I might make as gifts?

Thanks for your thoughts.

sans the Arrowroot, you've got the start of makings for an awesome holiday chutney. What fruit/vegies do you have on hand? Do you have jars? Are you up for some canning?

Hmmm...a very interesting thought! But if I do that I may end up keeping them for myself!

Any other thoughts?

Back in the day I had time this time of year, I made a spice blend for chicken breasts which had dried mustard, crushed fennel seeds, lemon peel, thyme, paprika, tumeric, a dash of nutmeg and bread crumbs. It probably had a few other ingredients (I'm working off memory here) instructions were to add parm. cheese and toss with tenderized chicken breast. My family loved getting this for x-mas.
