Default The simple things...

Hi guys and gals,


It happened to me again! I was just blown away by something sooo simple. I know many of you have been using some of thee "secrets" for longer than you can remember. But I am certainly not in the group of those lucky individuals that are all things culinary.

Some of you may remember when I descovered cooking with homemade breadcrumbs (eggplant parmesean was just out of this world!). I've heard a million times that you should cook using your homemade breadcrumbs. But I've always kind of nodded my head in agreement, that I should...yes...I know, and moved on to things that seemed more appetizing (if you will). But boy, oh boy did I underestimate the flavors that these "simple things" could add to any dish.

My latest (today) was making an Alfredo sauce. I make mine using heavy cream (among other things ) Ok...now I've been looking for simple pasteurized heavy cream...and not ultra-pasteurized. This seemed like a simple feat at first...but long after my search started...I was still searching for some .

Today, my wife suggested going to Oberweis dairy. Low and behold...they have simple pasteurized heavy cream with a 40% butterfat content. I can't tell you how many times I've made cream sauces and just wasn't satisified with the outcome. It was missing that big rich cream taste. I've always know that the pasteurized heavy cream, but what do you do if you can't find any? Well...in the past...I've always continued making the recipe. After today...I won't make another cream sauce until I can get some decent butterfat content and simple pasteurized heavy cream (not ultra-pasteurized).

It really turned out delicious...this is what I've been missing. I only wonder what else I've been missing

NOTHING beats real cream, from a local dairy that doesn't screw it up. Around here, that's the Strauss Dairy. Even comes in glass bottles, complete with deposit. Not only that, but you have to stir in the fat that congeals on top.

I love Strauss's yogurt!!! Whole Foods used to carry it in STL, but nagnabit they dropped it about a year ago. Every time I hit San Fran I snag some.

Who knew about Oberweiss, good info for those of us in the area.
