Default Enjoying horseradish without beef

I'm attempting to switch to a vegetarian diet, but I'd really miss horseradish. Any suggestions or knowledge on how to enjoy horseradish without meat?

How about on a PLT? Smoked provelone cooked crisp, lettuce & tomato, with horseradish mixed with ketchup ("cocktail sauce") or mustard ("Chinese mustard"). (this would be a replacement for the mayo version) on some wonderful multi-grain bread.

Vegie tempura or anything Japanese.

Put a dollup in a bowl of stew made with turnips, rutabegas, parsnips, potatoes & onions with kale.

I put it on baked potatoes or even french fries. (The grated in vinegar kind)

I don't think I can think of any vegetable that wouldn't be good with horseradish, it is kinda like tabasco or soy sauce, it goes with everything. You could even put it in some cakes and cookies.

Default Mmmmm...horseradish.

If you eat dairy you can make a dip/sauce with sour cream (or a non-dairy sub), horseradish and meatless baco-bits. We went veggie for quite some time and they're really good.

Horseradish in a pineapple sweet/sour sauce for tofu.

Black bean "burgers" with horseradish. (In or out)

Potatoes with horseradish cream sauce.

Mac and cheese (soy cheese?) with horseradish.

Horseradish sorbet....uh....

Horseradish with steamed german cabbage & veggie brats, whole dill seeds.

(for God's sake STOP me...!)

All great ideas, I'm simply trying to cut back on meat but love few things more than a good chicago/med rare steak dinner, with garlic mashed potatoes and steamed veggies, with of course, fresh grated horseradish in vinegar. The part I'd miss most is the horseradish, looks like that's solved however.

Laf, I missed my entire point with the last post when I went off topic. I started saying I'd like to cut meat out of my diet, but still eat dairy etc, a non-vegan that is.

Are you cutting out seafood also? Horseradish works well with many kinds of seafood, especially salmon. Also horseradish goes well with beets. In mashed potatoes. In soups. On salads, in a dressing. Heck, I can't think of much that couldn't benefit from a little horseradish.

I'm almost embarrassed to say that the one processed cheese I love is Wispride with horseradish. Horseradish and sharp cheese are a marriage made in heaven. And sour cream or creme fraiche with freshly grated horseradish and a little fresh lemon juice makes a great all-purpose sauce for vegetables, noodles, potatoes . . . Just because you want to eat less meat, that doesn't mean you have to give up horse.

Horseradish is a natural with tomato. Make tomato horseradish vinaigrette. Bloody mary sauce or marinade. Put it in your mashed potatoes along with the garlic. Also good with mustard for vinaigrettes, sauces, marinades. Think wasabi and it's applications.

apple cider, cider vinigar and horseradish viniagrette.....

chicken meatballs with asian spices and horseradish.....

cookies with horseradish? ok.....I'd love to read more. obviously a spice molasses one could adapt but other than that I'm stumped.
