| I am making a snoek cake as part of a recipe for a competition. The problem is we only have an hour and two burners to work wiith. The recipe calls for mashed potatoes but we will not have time to fix. I was wondering if any of your could give me some pointers on what I could use instead of the potatoes. As long as it does not have to be cooked we can use it. I will have rice at my disposol (it is cooked). Any pointers? Here is the recipe. Snoek Cakes 100 g flaked smoked Snoek 1T 2t mayonnaise 1t English mustard 1t Paprika 1T of a bunch fresh coriander, chopped Salt and freshly ground black pepper to taste ½ one egg 1 Idaho potato mashed Fresh white bread crumbs to coat |

| Is that all you're making? Because if you peel and dice the potato, it will only take about 15 minutes (probably less) to prep, cook, drain, and mash.

| cool. We have the time for the potatoes, but not the space. We only have two burners and they are in use basically the entire one hour competition. Any thing we could take away that doesn't need to be cooked would be a life saver. |

| How much prep are you allowed prior to the competiton? Since you only have one hour and two burners. |

| Where do you get the Snoek? Is it like some of your friends give you a burlap bag, take you out into the woods at night, tell you to wait and they will drive the Snoek into your bag? Mike Well, OK- what the he!l is a Snoek?

| We get 15 mins. of prep prior to competion. Snoek is a type of fish. |

| I'm on the sweet side, so don't laugh at me. Can you possibly cook some more eggs, like hard boiled, fried, while you are cooking something else in the pan. Then chop it up and incorp. into the cake? I said don't laugh!!! I really love crab cakes that have chopped eggs in it. |

| Browns- By reading the recipe, is the potato there to bind the rest together? If so, how about bread crumbs and egg to replace the potato.

| We are thinking either bread crums and more eggs or more fish and more eggs because its purpose is to just bind them. |

| Browns chef, Can you use arrborio rice (risstto?) and make it with a nice roasted chicken stock you can do ahead of time? Then for presentation, sear your snoek rissotto cakes with butter until GBD, and prepare a nice grainey mustard burre blanc and a micro green salad? Just the first thing that came to mind. If you have to use potatoes, can you shred them fine and soak, then blanche them before you fold them into your mix? What other flavors do you have in mind for your snoek cakes? Do you get your snoek already smoked, or is that part of the competition? |
