| Hi, I'm a newbie. I enjoy gourmet cooking and am definitely past the novice stage. I do have a question about shrimp, though. When deveining shrimp, I sometimes notice an orange substance located atop the intestinal tract. Can anyone tell me what this is? Any insight would be appreciated. Thanks, Jarry |

| It will carry its own flavor if your buds are that sensitive, but usually it will come right out with the use a paring knife. ![]() |
