Wink Shrimp Question

Hi,

I'm a newbie. I enjoy gourmet cooking and am definitely past the novice stage. I do have a question about shrimp, though. When deveining shrimp, I sometimes notice an orange substance located atop the intestinal tract. Can anyone tell me what this is? Any insight would be appreciated.

hi,

you may refer to the corail if i am not wrong . This is a substance the animals feed from when in captivity. It is more visible with lobsters and langoust.

It will carry its own flavor if your buds are that sensitive, but usually it will come right out with the use a paring knife.
