| Hi.how do you make a thick curry base sauce? At the minute i fry 8 onions down to a paste and it tastes real good,but,it takes about an hour. |

| I blend some flour with sour cream. Add that to the mix. Then I can add anything like meat (pre-cooked of course), mushrooms, tofu... For a clear curry I've used chickpea powder, roasted eggplant (roast it in the skin until it's soft). Lentil paste. Potato. Depends on what the end result is. The onion thing sounds good. April |
