hi kpow,

What region of India are you from. As i believe you can not generalize Indian cuisine from Ceylon to Kashmir with its herbs and spices and believes.

Hello Kpow and welcome to Chef Talk. I'm interested in all Indian cooking, from north to south and all points between. I'm just beginning to educate my palate for the flavors. While we have a number of Indian restaurants here where I live, I often wonder whether the dishes have been modified for American tastes; or whether they're unusual, special occasion dishes that are rarely (if ever) served in Indian homes everyday.

Everyday, home cooking is more what I'm interested in learning about. I have the great good fortune to have access to excellent spices and an Indian grocery and spice store. Now I just have to learn! We're lucky to have a few members here from India; I hope to learn from you, too.

the chef that I was staging under right now has been employed in wisconsin area. I don't have the name of the restaurant, but do visit there, it should be something what you are looking for.

Based on his recipes and my mom's combined, I did post a pictorial guide on one of the other forums that I lurk on. chole

There are atleast 2 others (one for tandoori chicken and other for vindaloo pork) also if you check out their EGCI section, there are atleast 2 threads on Indian breads. and atleast one on indian dishes.

These recipes are pretty much what we cook at home. Also, there's another huge site with *tons* of Indian home cooking recipes. I can't seem to get the link to come up right now.

However - for someone beginning, its a little hard to follow subjective instructions (I mean domain specific- please do not take offense as you might have a lot of experience in cooking and this is not a hit on you or any others) I actually took a page out of a guy who does chinese dishes in a pictorial guide.

hope you enjoy it and do give feedback, either here or there.
exams and all have made life miserable (not to mention job situation) I am planning to post my second one soon.

i am from bangalore.first things first before knowing about indian cuisine

u guys should know something about india,india is like a big version of europe,in europe many countries r there with their own language,culture and ofcourse cuisine,in india we have different states with their own culture and languages,in india there are more than 25 official languages and states are there,with their own tradition and culture.

So just think how many types of food we been cooking from more than centuries.

ya i do belive indian bit spicy which does'nt get along with western people

So i suggest u should little homework before proceeding to indian food .

Personally I love Indian food. I love the spices that are used and I love the spicy heat of many of the dishes. Unfortunately, most of my love of Indian cuisine comes from eating it, not cooking it. I have to admit that my knowledge of the cuisines there is very lacking, something I hope to someday remedy. Thank you for your posts and welcome to Chef Talk.

Mmmmm . . . Indian food! Yum! I am working on learning to make a few Indian dishes. Since we lost our Indian restaurant in our area, we have been having withdrawal! A new "global" restaurant is opening soon and I have my fingers crossed that they will serve some Indian dishes.
You can't beat the smell of Indian food. Makes me hungry just thinking about it!

Dosa, Naan, curries, coconut chutney and sambar... MMMM!

I am in love w/ southern indian cuisine from Mimbai(BomBay). I love dosa, all the vegi frankie(sp), and love the aromas and heat of the food. I am a vindalu guy all the way.

I am going back in November to meet some people I met while living in Holland. I have been to bangalore, but want to see much more of the country. The people are incridable,and I am in love w/ the culture...I work for the Jain family right now(and for the past 3 yrs), and also the Rahil Family..though they are s-ihk, not hindu.
