Check out Penzey's. As many here will agree, these guys have some of the best spices around.

Smile Pretty Close !

Hi kent2981 ! foodi here !

Are the spices you are looking for for home use or commercial ? My opinions about spice use are these. Only buy the amount of spices you know you'll use in a reasonable amount of time. Their bouquet doesn't last indefinitely. The fresher the better. If they are really fresh (and some may not agree with me here and that's ok)they can be just as good as name brands or exotic stuff from far away places. If you are dealing with a salesman they will sometimes try to sell you bulk but if you are still trying to get rid of the stuff 2 years later than what's the point ? At this point it will most certainly have lost it's luster .....
The other thing is to properly store them away from moisture and heat. Where do most people store their spices ....right above in the cabinet next to the stove ??? Go figure....
In some instances you can use whole spices by toasting them first and then grinding them as you go with a small spice grinder for certain baked items, marinades and sauces and you will be thoroughly amazed at how much better the flavor is !
Also using and buying basic spice blends from the store I think is not the best way to go when you can make you own blends fresh, controlling the amount of salt that goes into the formula. Most commercial blends of say blackening seasoning, steak seasoning and fish or poultry seasonings and such are made notoriously with way too much salt. They are using food grade salt which costs them probably less than .20 /lb and it is probably 50% of the weight of the formula at least! While charging you big bucks!

Also in the process of making these blends if you do it yourself you are using up and rotating a good portion of the rest of your spice inventory at the same time ! You are also able to impact the flavor to your exact tastes !

Try using Penzey's Spices : This is not the only outfit but it is a good one !
Call them and ask them to send you a catalogue(complete with recipes!) free in the mail 1-800-741-7787

www.penzeys.com

I hope this will help you ! Foodi4 as long as I breathe !

Default Another Penzey's Endorsement

While we will sometimes buy locally (we have two spice merchants in town as well as a restaurant supply house open to the public), we've found Penzey's to have the best variety and freshness. That wouldn't be worth a note (given all the Penzey's endorsements above), but I also want to add that they have been very helpful when I needed information or advice on a spice question. Plus their catalogs are full of useful information, recipes, and tips.

Wow, this is a great thread! Something I never would have thought to ask but has me thinking... where in Arizona are the best spices found?

Free Rider,

Check out your local ethnic groceries, stores that support organic produce usually have spices in bulk where you can get only as much as you need. Turnover is also a factor. It's better to get cheap, common spice brands that sell out frequently so the stock has to be replenished then it is to buy an expensive brand that's been sitting on the shelves for three years.

Look around, use common sense.

well...I don't have anything new to add to the discussion. But would have to agree with the Penzey endorsement. I'm also in total agreement with foodi4lif, buy small amounts. This will ensure that you not only buy fresh spices...but also that your using fresh spices.

If you want to get hold of some less common spices, I'd try your local Indian Grocery store. You´ll be able to find all manner of strange things!

Holler at my best old yankee pal in the world..his name is Joe Ames from PA. Joe's stuff is so fresh you have to slap it sometimes.

http://www.theingredientstore.com

Joe is just recovering from some serious open heart surgery with complications. His boy Bob is running the place. He be most glad to have you order from him as opposed to them other nice folks. That way Joe can get outta the horspital. Sometimes they wont let you leave till the bill is paid. Pulled that one on me on the birth of one of my chillins one time. Now dont even click on his FAB bbq injections. It make you want to buy some.

Terra Spice has the freshest stock of spices, and will do custom blends.
