| Americas Test Kitchen did a recipe BEEF BRAISED in Barolo using a chuck roast so Will this work with a top round roast which is what i have?? What can you use instead of barolo which is costly and hard to find that will work just as well? i was in Costco booze store and Barolo was $59.95 a bottle. I saw Barbaresco at the Navy Exchange for under $10 but since i don't drink did not know if it could be used. Pinot Noir or a good hearty Burgundy, what are these ![]() |

| Substitutes for Barolo per ATK Not everyone has a bottle of Barolo lying around the house. Could a moderately priced wine-cabinet staple really take the place of this king of wines? We tested our Beef Braised in Barolo recipe using five inexpensive red wines to see which was best suited to wear the crown. We found that it takes a potent wine to withstand three hours in the oven and still have much character. Our one Italian entrant, the Chianti, fell flat, as did the Merlot and Côtes du Rhône, the other medium-bodied wines in our tasting. These fruity wines lacked the potency of a heady Barolo. We had better luck with Zinfandel, but Cabernet Sauvignon was the most commanding and was, therefore, the better subsitute. |
