Default 4 course set dinner

Hi, i'm a culinary student in singapore. I'm have to organize a 4 course set-dinner (meat set, seafood set & vegetarian set dinners) at the school training restaurant for a week. It is a group's project and marks will be graded on profit.

As the sponsors are the U.S poultry board, we are recommended to use their chicken and US style or US-fusion cuisine. Welcome any ideas on planning a chicken, fish/seafood, veg set-dinner. Need 4 courses - appetizer, soup, main & dessert.

By the way, the menu is priced at $26 nett. And food costs is 35% which is roughly $9.10. The previous batches were really good, having full houses every night. I plan to come up with something really different and special and so would appreciate any suggestions.

BC you say that you're planning on coming up with something really different, then you ask us for suggestions. I have a suggestion that as a student you will not learn anything from us giving you the menu as tempting as that may be. I would suggest that you research and come up with your own ideas and then we can help you fine tune them or critique them. We're here to help, just not do the work for you.

Hi, thanks for the advice...

My set dinner is as follows:

Appetizer:
Medley of seafood with Mango Wardolf served with kumquat reduction.

Soup
Seafood Bisque

Main:
Herb stuffed Chix Roulade with BBQ king Prawn,
served with a combination of sweet pumpkin and potato,
roasted vegs and asparagus spears,
laced with teriyaki sauce

or

Grilled Salmon with Almond Crust and Jap Tofu medaillions,
served with a combination of sweet pumpkin and potato,
roasted vegs and asparagus spears,
laced with citrus emulsion

Dessert:
Pastry team will confirm with me soon, but i told them to create s/t with Jap influence as my theme is Japanese fusion.

Any comments or pointers from experts out there?
