Default Sauce for grilled shrimp

Does anyone have a recipe for a dynamite sauce to pair with grilled shrimp that is NOT tomato based? I am thinking of something like what Olive Garden offers... but am open to any suggestions!

Many viagrettes would work, and I don't just mean the ones you use on a salad.

Somehitng with lime, cilantro, a spalsh of heat and some olive oil would be good.

Or some coconut milk, lime, cilantro and curyy, with some ginger and garlic I mihgt simmer the coconut milk a bit first to thicken it up some.

A good red wine vinegar, some evoo, garlic grainy dijon and some herbes de provence would be good

Salt and pepper in all of these of couse.

aiolli in many forms, straight, red pepper, or maybe chipotle.

Default Chunky, thick or thin?

You could use a ceviche type of salsa. Lots of cilantro, lemon (or lime)...pico de gallo. Grilled fruit salsas...

Chutneys.

A variation of Asian Lobster sauce.

Alfredo with a twist...different kind of cheese. Goat maybe?

Newburg only I'd use mushrooms and a good dash of LA hot sauce. Nice.

Scampi garlic butter...

Lemon Pepper butter...

Asian Green Curries or Sweet chili sauce. Indian curries. Morrocan spices, mint, fruits, cumin...

Thai is good...coconut goes great with shrimp plus you can make it as spicy as you like

A traditional Hollandaise?

Herbed Seafood stock/wine reduction.

Fruit chutneys

Fruit coulis

The possibilities are endless. Depends on what the end result is you want to achieve.

Default Shrimpy

Olive Oil, pesto, red pepper flakes, salt, jerk seasoning, and a little lemon zest. Marinate and go.
