Default Truth in Menus

HI, new to the forum and was just wondering about what people thought about truth in menus? Regardless of whether there is a truth in menu state law or not, how much does it matter to you?

For instance, getting hedgehog mushrooms instead of chanterelles comes to mind. I see this all the time in restaurants and grocery stores, which isn't really lovely since chanterelles are more expensive and taste very different.

One kitchen I worked in sold a Kobe Hamburger for $35. The hamburger had no authentic Kobe beef, (not even the American Kobe,) it was made with 50% sirloin and 50% tenderloin.

I find this somewhat lacking in integrity but if money rolls in I guess owners don't care. Any thoughts???

I would not be able to sleep at night doing something like that. If I say I am serving an item, that's what I serve. No BS. It would go against the very fiber of my beliefs. I would argue that someone not using the ingredient(s) stated as being used is swindling the customer. Then again, that may be the cop training I have shining through.

I personally don't agree with it, hate it actually. But then again, I love food more than I do money.
