Chef Sustitutions

I need to know an acceptable non-alcoholic susbstitute for beer in recipes.....such as "beer batter" for fish or onion rings or a Wisconsin Cheese soup recipe that I have which calls for beer. Also, what can I use in place of an orange liqueur....recipe calls for Grand Marnier and I need something absolutely alcohol free.

For fish and onion rings you can use yeast (not much) with water as substitute of beer.

Most beers are brewed from malted barley and flavored with hops, making them the slightest bit bitter and adding a pleasant bitterness to the dish. Just purchase a non-alcholic beer.

Substitute unsweetened orange juice concentrate for the Grand Grand Marnier.

With chili and things like that I just use beef stock. Even though it has a different flavor than beer it gives it that "big, hearty, manly essence to the dish". I agree with epicious that beer is very bitter and a good substitute would be water and yeast. You should also use non-alchoholic beer for things you don't want to use alchohal in. P.S. Alchohal also wears off during cooking time

if you are familiar with russian cooking (or have a shop near you that sells goods from russia) try KVASS. it is made from dark bread and yeast, non alcoholic, has a nice dark color and taste,it is our national drink...

If you live near a latin market, look for Malta. It's a soft drink made from malted barley but not fermented.

Edited to add: You can buy orange syrup, the type used in coffee, like Torani or Monin.
