Default Proper fluffy Coconut Jelly

Does anyone know the correct way to make the proper fluffy "yum Cha" style coconut jelly? I have tried many recipes from off the web but they all use the agar agar which sets the same as gelatin (really hard). I want that lovely fluffy stuff.

Use coconut milk with the fat.

Hey, thanks for your reply. Where can I get the coconut milk with the fat? I've only ever seen the tins of coconut milk! Do you have an actual recipe for the fluffy coconut jelly? Ta
