Default Seeking recipes with coconut and pineapple

Anyone have any great Pineapple and Coconut recipes, not just deserts either. I am trying to make a risotto with vanilla beans, pineapple and coconut but haven't got it down yet.

I also put some smoked ham and seared/carmelized pineapple on a pizza last night to pretty rave reviews so you don;t have to adhere to ideas/recipes with both pineapple and coconut.

Anyone have any ideas?

Some curry with coconut milk would be fine with some pineapple.

To me, coconut and pineapple is not a very versatile ingredient duo. No matter what you make it with, the end result always tastes like coconut and pineapple. It never really matures into a new taste. But they both taste great alone and uncooked as it is. Hmmm that sounds like pina colada.

I know both flavor are very distinct but they happen to be my precocious six year old daughter's favorite flavors. Lucky me...

I can usually get her to eat my red sauces on pasta (she prefers Farfalle and will tell anyone who cares to listen at high volume when I make anything besides Farfalle) and once in a while she gets more open-minded but unless I throw pineapple in a red sauce, or on a pizza, or on her whatever it's a crap shoot as to whether she will eat it.

What was your soffrito and vino for the risotto? I made a coconut and pinapple risotto for extra credit, and my teacher liked it and I thought it tasted good as well...

First I thought I would simmer coconut milk with the split vanilla beans then strain out the vanilla beans and continue simmering the coconut milk in one pot while I simmer some porcini mushroom broth in another.

Then I am thinking I will start the risotto in extra virgin olive oil then deglaze with white wine and begin adding from the two pots of liquid 1/3 cup coconut milk, stir then 1/3 cup mushroom broth and the last liquid addition(s) would be a little more white wine. Once the risotto is nearly done I will add shaved coconut, the vanilla beans (from earlier) and some seared pineapple.

That's my next attempt I just haven't tried it yet. Still theoretical because I haven't felt like spending a half hour before I can eat the last few days when I got home from work. It's all been easy fast stuff lately.

When I do try it I can report back how it worked.

Now when you say "soffrito" do you mean "soft fried vegetables" like the culinary term or are you talking about soffrito (the sauce) used in Latin American and Italian cooking?
