| Anyone have any great Pineapple and Coconut recipes, not just deserts either. I am trying to make a risotto with vanilla beans, pineapple and coconut but haven't got it down yet. I also put some smoked ham and seared/carmelized pineapple on a pizza last night to pretty rave reviews so you don;t have to adhere to ideas/recipes with both pineapple and coconut. Anyone have any ideas?

| Some curry with coconut milk would be fine with some pineapple. |

| To me, coconut and pineapple is not a very versatile ingredient duo. No matter what you make it with, the end result always tastes like coconut and pineapple. It never really matures into a new taste. But they both taste great alone and uncooked as it is. Hmmm that sounds like pina colada. |

I can usually get her to eat my red sauces on pasta (she prefers Farfalle and will tell anyone who cares to listen at high volume when I make anything besides Farfalle) and once in a while she gets more open-minded but unless I throw pineapple in a red sauce, or on a pizza, or on her whatever it's a crap shoot as to whether she will eat it.

Still theoretical because I haven't felt like spending a half hour before I can eat the last few days when I got home from work. It's all been easy fast stuff lately. When I do try it I can report back how it worked. ---------------------------------------------------- Now when you say "soffrito" do you mean "soft fried vegetables" like the culinary term or are you talking about soffrito (the sauce) used in Latin American and Italian cooking?
