can you freeze cream cheese? Does it stay in the same consistency after it defrosts?

Technically, yes - it is possible. But it is not recommended because it will definitely alter the consistency into a curdled texture.

I certainly agree with mudbug's comments. However, cream cheese is a common ingredient in many frozen desserts and when it's combined with other ingredients in this way it performs quite well even if frozen. Last edited by Myplaceoryours; 12-09-2006 at 08:26 PM.

Cream cheese goes grainy when frozen. This can be mitigated slightly by combining it with sugar as sugar is a freezing point depressor. This is why cheesecakes freeze better than plain cream cheese does. I'm still not a fan of frozen cheesecake, though.
