How 'bout adding some sauted chicken livers and diced apples along with a bit of chopped celery?

Try sauteing some fresh shelled chestnuts in butter instead of pecans and add to your pilaf.

Diced par-cooked winter squash makes a nice color, flavor, and texture contrast.

Pilaf is one of those dishes you can do almost anything with. What fun!
