Default Crabcakes: freezable?

I have a catering gig coming up and was wondering if i could par-fry the crabcakes 2-3 days in advance and throw them in the freezer until i serve them? If so, will i lose a lot of taste? Thanks.

I freeze vegetable fritters and deep fried stuff all the time without any loss of flavour. Just put your crabcakes in a ziplog bag/airtight container and freeze them. Once they are thawed, simply bake them in the oven just before serving. They will look like freshly made!

Default Crabcakes

hey thanks a lot! i think i will parfry them and then throw them in the oil bath once more... baking just doesn't give the crabcakes that nice crispy bite. thanks!

Thumbs up Freezing Crabcakes

I would lay them out on a sheet pan to freeze, then transfer them to zipper bags for long-term storage. That will keep them from sticking together.

For small quantities you could go directly from the freezer to the fryer with par-fried ones. But with the quantities I imagine you'll need, this would likely lower the oil temps too quickly.
