| My girlfriend is looking to make some healthy snacks that she can bring to work with her. One idea that she has is to make a big egg white frittata (10 eggs wites and two whole eggs is her idea) with a bunch of veg in it that she can slice up and have for a few days. I am very sceptical about the idea and think that it will be way too watery and won't hold. Am I crazy? Will it work? Anyone have other suggestions for healthy homemade snacks besides carrots, celery sticks, nuts, raisins and other mundane things.

| The South Beach Diet book (and cookbook) has a recipe for mini-quiches you make in muffin tins. I'd recommend that the veggies be sauteed before adding them to the egg mixture or they'll be too soggy. I'm a home cook and learned that from experience rather than from an instructor.
