Default Laissez Les Bons Temps Rouler?

Anyone planning anything special for Mardi Gras, come Tuesday?

I'm figuring on Crawfish Etouffee, Red Beans & Rice, and, from the Cajun Cooking School in New Orleans, Pork Chops with Spinach & Pecan Stuffing.

We are doing our thing Sunday with a
Crawfish boil,
Dirty Seafood Gumbo
Grilled Sausages.
Assorted breads and flavored butters.
Shiner Bock, Blonde, & Hefeweizen. Red and White Cab's.
Assorted Desserts and Kings Cake
It's still early so the bugs are not jumbo yet. I hope 75 Lbs. is enough

I've eaten more than my share of seafood gumbo. And probably another person's share of dirty rice. But what, please, is Dirty Seafood Gumbo?

Traditionally, in the UK, Shrove Tuesday is known as Pancake Day - so that's what we'll be having.
