cooking mix spring greens

Hello,

I always have a lot of mix spring greens, and I am wondering if using these in a tomato-base soup would be good or bad idea. I have used spinach on a number of occasions, but I am a little hesitant to use mix spring greens as a substitute.

Do you mean a salad mix?

Yes, it is the pre-washed bagged salad mix.

Go ahead and give it a try. I've sometimes added the spring mix to my home made vegetable stock, along with other ingredients, and the results were quite pleasant. Never tried it with tomato soup though.
