| I bought some beautiful Portabellos and some Criminis a week and a half ago for a birthday dinner I was going to make for friends (for my birthday, actually). Then I got the stomach flu. So I finally got around to checking them and they're not slimy. Some have gone a little soft in the cap, but otherwise they appear OK if not super fresh. Can I still use them if I use them tonight? Hate to waste them. I'd be sauteeing them for a pasta sauce.

| Hope you're all better now. As long as they are not slimy, and don't smell bad (kind of like ammonia, definitely harsh), they should be fine. Give them a good brushing, wipe them with damp paper towels, and use high heat to saute. ![]()

| Thank you both! That's what I was hoping for. They don't smell; they just no longer have the springy, taut skin of a younger mushroom. Then again, neither do I And thanks, Suzanne. Yes, I'm all better and looking forward to my first glass of wine since getting sick ![]()
