Question Veggie Storage Question - Keeping Properties

Over the next few days I'll be at home a lot, and I was thinking of cutting up some veggies for storage in the fridge/freezer so that they can be quickly added to whatever dish I'm making. I'd like to dice some onions, dice and matchstick some carrots, chiffonade some leafy greens, dice some potatoes, red and yellow peppers and maybe a few others, but these come readily to mind.

How well will these prepared veggies take to storage? What's the best way/place to store them? How long might they keep in various storage situations?

Shel,
You cook and know enough about food to look into a Food Saver. They can be found pretty cheap on ebay. I even buy the fake bags on ebay and find them better then the original for freezing.

I know about the food saver thing. In fact, there's some model of one here at the house. However, my question is about the keeping properties of the food. I've never tried to store diced onions, carrots, potatoes, or other vegetables, in any kind of packaging or storage container. I don't know how well they'd keep or for how long in either the fridge or the freezer.
