Default Egg Yolk Question

Hi Gang,

What size/grade eggs will provide the largest percentage of yolk to white? Is this something that's even part of the sizing/grading process?

I checked Chef's Book of Formulas, Yields, and Sizes and all it gives is minimum weight by the dozen for each size. That includes shell.
