Question food science

I'm intersted a lot in "whys" as opposed to
"hows". If any of you know of good web sites concerned with food science, I would be happy to know. I searched, but most sites concerend with "food-science" were academic and had nothing to offer to chefs.

Don't know about web sites, but "On Food and Cooking" is a great book for that kind of thing.

if you like the scientific approach to cooking, check out cook's illustrated (periodical). it isn't strict food science, but it's they do give reasons for why things work, and is the closest thing to running a "food experiment" that i've seen.

now that's the problem i don't live in the states, and have problem getting info from thos good magazine. That's why i'm using the net. I know one site with great info "fine cooking" - http://www.taunton.com/fc/index.htm
If any1 know any more good food-science sites it would be ever so helpful.

Harold Magee's "The Curious Cook" is the definitive source on kitchen science. This book should be readily available.
