Default GLUTEN

I have this great old recipe for bread that I want to make. The recipe calls for a cup of gluten, which I have never seen in a recipe. Do you think that it means just mixture of high gluten flour? But flour is called for seperatly. I don't think that they could mean seitan, or could they? Any ideas?

Vital Wheat gluten flour is available at
kingarthurflour.com or at your local health food store. It is very high in protein. I use it for white breads when I want a lot of sturcture fast.

I use gluten, in addition to flour, in my wheat breads. Helps to make it firm. Albertson's is the only "regular" grocery store around here that carries it.

Angelina, I'm glad you know of it! So what is it? Is it a powder? paste? Is it bigger that a breadbox? Who makes it? Perhaps I can order it online?

I've used gluten in powder form. It is available in a box, wrapped in sealed wax paper. I find this item in the baking section of Albertson's. I can't think of the brand name right now, there is only one option available at this supermarket. I store my gluten in a sealed jar in the fridge. (Here in the desert that helps things last.) I have been told by many that gluten can be skipped in "most bread recipes." Unfortunately, those who told me this, didn't tell me which recipes are "most." I didn't care for the bread's consistency when I skipped it.

I had difficulty with that last posting. Here's the deets. I've used gluten in the powder form; sold in sealed wax paper then boxed. I find in in the "baking" section at Albertson's. I don't recall the brand name. I store it in a jar in the fridge, so the box is gone. I've been told that "many breads" are fine without using gluten. I've just never been told which bread recipes make up those "many breads." I have tried making my recipes w/o it and the consistency is very different. I'm sure you can find it online if your local grocer can't order it.
