| Really country, really simple, really good--maybe won't taste exactly fried, but...and I'm also sure this is so basic that everybody knows it but...here goes: combine appropriate quantities of rice and broth--maybe a little extra broth-- (any rice, any broth--I like a brown/wild/white mix and non-fat chicken broth, but I also like popcorn rice/smoked pork broth)lightly dredge chops in seasoned flour, put on top of rice, cover tightly, bake until chops are done (depends on how thick they are), then brown chops on both sides under broiler. Good served with cabbage. Yummmm.... |

| You could do an oven fried chop, hot oven, toss chop in clarified butter and dust in flour or do crumb coating, and bake at high heat. The butter (or oil) will "fry" it in a hot oven, and if it's a convection oven, even better. The key is fat & high heat. |
