Post Wine reduction dilema

I reduce leftover wine if it has gone beyond drinking since the concentrated sugars and flavors make a wonderful sauce, but wondered if it can get to a point where it is not good for even that. I have a bottle that's been sitting on the shelf for a while. I forgot to use the air preserver on it. Also, can you reduce white wine for anything?

1. You can reduce it and make a burre blanc.

2. Another thing you could use it for is if you make soups you could use it to deglaze your sauted veg.

3.Yet another use, is when you are going to roast something you could use in the roasting pan.

Just smell it. As long as it doesn't smell like vinegar, you should be ok. And even if it does smell like vinegar, then you've just made homemade red wine or white wine vinegar to use for cooking!

I always say
IF you can't drink it, you can't cook with it. You can make vinegar with it though.

I agree, if the wine has oxidized badly then it will pass that off flavor to whatever you are cooking. Plus when reducing red wine, if your sauce calls for any stock or demi glace, make sure you simmer the wine with the stock or glace for a bit, the proteins will smooth out the tanins in the wine.
