onesock,

What size are your shrimp ? 16/20s

I prefere to cook my shrimp shell on for two reasons
1) The shell imparts flavor
2) The shell helps mantian a nice shape (less curl)
And yes you can P&D your shrimp after there
cooked no problem.
I forgot to say about the cooking time. 4/5 minutes should do for 16/20

Perfect thank you! I am writting about shrimp, and since it is not really a recipe, i didn't feel the urge to go to the store and buy shrimp to test!

OneSock-
Steam them over beer- it's the signature dish in Harrisburg, PA. Throw in crab boil spice or other condiments and let these simmer for a while before adding the shrimp.

I got watched Alton Brown on Good Eats make shrimp by broiling it in the shell after soaking it in a brine solution. It was for shrimp cocktail and it was mighty yummy!

30s are a good size,
after using scissors to snip shell and remove intestine, I leave in cold salt water 30-45 minutes.
Drain, then a mix of fresh chopped garlic and spring onions spread into the slit body,
spread onto a platter, then steam,
about 4-5 minutes for me,
strange but seldonm do I time it,
inner clock alarm rings auromaticall,
a splash of seasame seed opil, light soy and a few drops of nrabdy or eprnod does wonders.

????what do you add at the end of that?

I do shrimp boil Louisiana style, Zatarans spice mix, garlic, lemon, salt, extra cayene
bring to boil turn to med...let water saok up flavors....return to a boil drop in shrimp cover and take off the heat, let sit for 10-20 minutes until done....the longer the spicier...check for doneness.
I devein after cooking...Head on is best.

I only devein for wimps and psychopaths. And my father-in-law. Wait, that was redundant. I eat them with the intestine in. That spring onion/garlic thing sounds yummy, though--I might devein for that.
