Post Turkey breast to impress the inlaws

I made a turkey breast for thanxgiving stuffed with an incredible sausage/spinach stuffing.
I deboned the breast and made it like a roulade.
Anyone have any suggestions for a great gourmet stuffed turkey breast that will knock the socks off my new inlaws?
Thank you
Danielle

Mad

Hello! Your Thanksgiving recipe sounds like it was just delicious. I'm sure that you'll get lots of mouthwatering ideas here! I stuffed a turkey breast one holiday, just as you did. I used the giblets, black cherries and pistachios. I was really pleased with the finished product. Happy Holidays!

Go Greek... feta, spinach, fresh lemon and if you want to go all the way, chopped Kalamata olives...

how bout a stuffing with: Turkey mince, macadamia nuts, sun dried tomatoes, bacon, pesto and sage.

Just make a fine forcemeat using the above (i find adding about 25/30% bacon fat adds moisture) and breadcrumbs, egg whites and soft peak cream.

Danielle,

How about a Carribbean inspiried turkey. I call it "Orange Pineapple Glazed Turkey."

To make the glaze,

1. Pour orange juice and pineapple juice into a pot, add sugar, a litle chicken stock, and a piece of fresh ginger (crushed).

2. Bring to a boil and then thicken with a cornstarch slurry. Salt / pepper to taste.

There is your glaze.

Season and roast your turkey as you always do, but, at the last half an hour paint the turkey with the glaze every ten mins. That's it. The glaze can also be used as your sauce.

Serve it with wild rice or some kind of dried fruit and seasoned rice. and any seasonal veg in your area.

Hey Danielle,

I am also an island boy. I did this orange pineapple glazed turkey for my family, for thanksgiving this year. About forty people they loved it. Go ahead and do it then tell them it was your idea, you pulled it out of the air.
