| I have a tube of marzipan that is hard. Can I salvage it (I was considering putting it into a steamer or opening it up and sealing it into a ziploc bag with a piece of potato), or should I just pitch it? |

| I recently read that hardened marzipan and almond paste can be resoftened using any of the methods for resoftening brown sugar that has gone hard. The ziploc bag with potato sounds comparable to the ziploc bag with apple or piece of wonderbread. If it is not too hard, i.e. you can still knead it somewhat, you can add a few drops of glycerin and knead until it becomes soft again. I had to do this in cooking school. Let me tell you that I hated it. You should pitch it if the almonds have gone rancid. I'd hate for you to pitch it since marzipan is so expensive.
