I have recently discovered bulk sausage, and I have fell in love with it. For those of you who don't know, bulk sausage is basically the sausage in ground meat form, with no casing. I want to use bulk Polish sausage for a Polish burger. I'm thinking about using 1 pound of sausage as well as 4 cloves of garlic and 1 small onion, grated fine with a tablespoon of chopped parsley. However, I'm not sure how many cups (approximately) are in a pound of ground sausage. my guess is about 1 1/2 cups? Thank you.

I'm not sure why you need to know the volume of a pound of sausage for what you're trying to do. Chop onion and garlic, add it by eye to what you'd like. If you're in doubt of your ability to eye it, start with small additions. Cook off a small bite worth and see how it tastes. make corrections, cook and taste again.
You can also just buy the sausage, pack it in a pyrex measuring cup and go from there if you must use a volume measurement.
I would add some extra ground meat to turn it into a burger -- it might be a little too intense all by itself (even/especially) with the onion etc. mixed in.
From what I remember of seeing premeasured packages of ground beef in the store, one pound was more like two cups, maybe even a little more. But I also don't quite understand why you need to know the volume.

I wouldn't use bulk sausage to make Polish sausage as there is sage and other flavorings in bulk sausage (which is meant for breakfast sausage) that aren't in Polish sausage. Use ground pork instead.
You can get different sausages in bulk just fine without the sage of a breakfast sauasage. My local grocer carries 4 or 5 different sausages in bulk form. And I can find more at more specialized places.
