| If you need it fat free, you can substitute non fat milk for the cream, a cornstarch slurry for the roux, and find some non fat parmesan somewhere. If you are trying to cut your fat intake. Just don't eat it everyday. Limit yourself to once every two weeks. Budget your fat intake and save it for really good things like desserts and heavy sauces. |

| I don't think it'll be fat free no matter what you do... I think you can do LOW fat... Have you tried cooking with Mocha Mix and eggbeaters... I make ice cream with them all the time... It's a great Low Fat alternative! But you need some parmigiana for the alfredo.. So try that. and there isn't any fat in nutmeg! |
