A great combo is balsamic vinegar drizzled over strawberries. I know it sounds strange but it really works, just make sure your strawberries are nice and sweet. Also just it to glaze lamb or game meats. It makes a great accent to these more full flavored meats. Have fun.

A glaze for a filet mignon is nice. Although with strawberries is a classic and wonderful pairing.

A vinegar that old deserves the best. It is treated more like a fine cognac than a kitchen condiment. Use it in small quantities, say drissled(sp?) over perfectly ripe fruits, grilled meats and fish. In Italy this vinegar would be sipped out of small thimble sized cups.
