| A key to good meatloaf is to use 1/2 beef and 1/2 pork or 1/3 beef, 1/3 pork, 1/3 veal. The pork is going to add a nice sweet moistness especially if you use ground shoulder. |

| Chefjohnpaul is right you have to use pork veal and beef for the best meatloaf, make sure you cook alittle bit of the meat before you cook the whole batch to check seasoning, sometimes when to use ground meat you might want to over season just a bit as it tens to lose alittle flavor during cooking.
