| I am looking for a recipe for a cream filling for cream puffs. The filling tastes like whipped cream but doesn't need to be refrigerated. It isn't real sweet like frosting. Does any one have such a recipe? Thanks for your help. |

| You are referring to pastry cream, I can't think of a recipe for one off the top of my head, but you should be able to find one in most pastry books. |

| Pastry cream requires refrigeration because it contains milk and eggs. It can be left out for an hour or three. It looks and tastes like custard. I think what you may be thinking of is either butter cream which requires refrigeration but can be left out for several hours or Super 50. Super 50 and the like are non dairy whipped toppings and are sold by the Rich company. You can also use products from Paris Gourmet, Dreidopple or Uster Products, add water and whip. Good Luck. |

| Julie, you can find powdered toppings in the grocery store with the pudding mixes. My grandmother makes the most outragous stuff from powdered dessert mixes, so do not be afraid to try them. look up paris gourmet on the internet. good luck. |

| Here's a recipe that I think might stand up to the heat. I haven't served it under hot conditions, but it's my guess that the flour in it may help it hold up longer than just a buttercream frosting. Like Whipped Cream Frosting (aka Poor Man's Icing) Cook together, stirring constantly, until a thick paste forms: 3/4 cup milk 3 tablespoons flour Set aside to cool. Beat together: 3/4 cup mixture of butter and vegetable shortening (equal amounts) 3/4 cup granulated sugar 1 teaspoon vanilla Add butter/sugar mixture to the cold paste mixture. Beat with electric mixer until creamy. |
